Is fermented sourdough bread gluten-free?

The internet often claims fermented sourdough bread as safe for individuals with celiac disease, proposing that the fermentation process breaks down gluten, rendering it harmless. While this claim contains a kernel of truth, it requires deeper examination.

Indeed, the fermentation of wheat-based dough with wild yeast and bacteria can degrade gluten to some extent. Controlled experiments have shown that measurable gluten levels in fermented sourdough bread can are still well above under 20 parts per million (ppm), a threshold considered safe for individuals with celiac disease.

Is regular sourdough bread safe for individuals with celiac disease?

Not currently. While future advancements may lead to standardized fermentation practices, the lack of testing makes it impossible to ascertain if all gluten has been broken down. Additionally, the use of wheat flour in kneading or on baking pans reintroduces unfermented gluten into the bread.

For those with gluten intolerance but not celiac disease, fermented sourdough bread may be a viable option, as the fermentation process reduces gluten content compared to other bread types. However, it's essential to recognize that sourdough is not gluten-free but contains less gluten.

Is there gluten-free sourdough bread?

It is definitely possible to make an excellent gluten-free sourdough bread. The starter, all ingredients and kitchen environment must all be strictly gluten-free.
